While I love creating big meals that take a lot of time in the kitchen, I also love when I can whip up dinner in a jiffy. You know what I love even more than that? When dinner is CHEAP! These burritos come together in less than 30 minutes, are super filling and they’re something the whole family will enjoy (and so will your wallet!)
Here’s what you need:
- 1lb ground beef (or turkey if you want to save even more money)
- 12 flour tortillas (burrito-sized)
- 16oz can refried beans
- box Rice a Roni Mexican style rice
- 1 Tbsp butter or margarine (for the Rice a Roni)
- Approx 4 oz shredded colby jack cheese
- Grill Press (George Foreman, Panini Press, etc all work)
- Taco seasoning (not pictured)
Approx time: 30 minutes, Servings: 10-12
1. Preheat your grill press to the “sear” setting (or highest. Mine goes up to 425, yours may go higher or lower.)
2. Cook your rice in a skillet according to box directions. Once you’ve reached the point of putting the lid on the rice, proceed with the rest.
3. Cook ground beef or turkey, adding salt and pepper to taste. Once meat is fully cooked, add taco seasoning and cook per package directions.
4. Heat refried beans on med-low heat, stirring frequently, until heated well throughout.
5. Assemble your burritos as follows:
6. Spoon out a serving of rice and center it on the tortilla, flattening to keep from having piles.
7. Spoon a serving of the heated refried beans on top of the rice and flatten.
8. Add a smidgen of shredded cheese. I know, I know. Cheese is phenomenal. I agree. But, in this case, less is definitely more!
9. Roll your burrito up by folding in two sides and then rolling it together. Place on your pre-heated grill press.
10. Close your grill press, searing the burrito, and keep it closed for a couple of minutes. Don’t apply a lot of pressure! You don’t want your insides squeezing out of the burritos. Once they’ve reached a nice browning, remove them from the grill press.
11. Let cool a 3-5 minutes and serve! (Hint: If you want to grill all of your burritos at once but still keep them warm, set your oven to the “warm” setting or the lowest temp it will go, and place each set of burritos in an oven-safe dish as you cook to keep them warm until you’re ready to serve.)
If you’d like to add a little extra something special to your burritos, I love to add 1-2 Tbsp of enchilada sauce to the inside of my burrito before grilling. It’s quite yummy!
